Speaking of comfort foods on a cold, cold evening, I’ve had a pot of red sauce simmering all day warming the house and fogging the windows. Homemade meatballs and three different kinds of Italian sausage were added about 3 hours before serve time. We paired this with a strawberry spinach salad with Joe’s poppy seed dressing, homemade bread, @vermontcreamery butter, and a lovely wine from David Finlayson called The Pepper Pot (purchased from @citywinemarket of course). So yummy and satisfying. Call us. Last night was pizza night and we ate well! Standard pepperoni for the boys and two fun ones for us! First, a zucchini & summer squash pizza on lemony goat cheese base with tarragon and a few kalamata olives just for fun. We topped that with some amazing balsamic glaze from @vaultemporia I also made a Swiss chard pesto yesterday and used that as a base for some salami picante, fresh grape tomatoes, and a sprinkling of mozzarella. Oh, and all the veggies & herbs were fresh out of my garden! So tasty!! Stay safe out there. Wash your hands. Wear your mask. Today I’m cooking with Quinn. We are making a homemade version of his favorite snack @cheezit It’s a super easy recipe and it’s really tasty! Recipe is below. Enjoy!! . . Cheesy Crackers ————- 8oz sharp cheddar, shredded (to make it super classy go visit @vaultemporia for some amazing cheese) 1/4 cup butter, room temp 1 cup AP flour A pinch of salt (And I added just a little bit of onion powder) A bit of cold water to bring it all together Mix all the ingredients together in a food processor, mixer, or by hand until a stiff dough forms. Pat it into a rectangle and refrigerate for a bit if it is too soft (which will be the case if you use a food processor). Roll the dough out to about 1/8 inch and cut into the shapes you want using a pastry cutter, knife, or small cookie cutters.
